There is something about the sweet walnuts combined with the fresh, crunchy taste from the celery and apples. For instance the fresh balance of being both sweet, crunchy and savory is perfect with the crumbled blue cheese.

My daily salad
I need my salad every day. No matter if we are having hotdogs or burgers, soups or stews or bbq’ing for dinner, I will have my salad as a side.
You know that it’s said that an apple a day keeps the doctor away. I love to use apples in my kitchen as often as I can. I am using apples both in my smoothies, pancakes, cakes, breads and of course my salads.
Apples can take an ordinary recipes and turn them into a delicious, flavourful, sweet and crunchy beautiful creations. In other words, this salad a la CPK it’s no exception.
By the time you’re finished with this post, you’re going to want to make this right away.
What I love the most about this salad? It’s good for you and delicious. I can eat it alone or with grilled chicken, as CPK does.
However, I love all of the salads from California Pizza Kitchen, especially the Waldorf salad. I mean, who can resist the mixture of apples, candied walnuts, crunchy celery, and my favorite beautiful blue cheese?! Not me!
I am sure you will get addicted of this salad too – and enjoy a Waldorf salad CPK copycat with less calories and a way less cheaper!
The salad can be mixed up in less than 15 minutes and yet, its full of flavor and very filling. Go ahead and enjoy!
Waldorf Salad CPK Copycat
How to make Waldorf salad
Start by heating up a pan and add 3 spoonful water and 3 spoonful sugar and about 1 cup of walnuts.
Now stir constantly until the nuts are glazed.
Carefully pour the glazed nuts out on a baking sheet to cool down. Be careful not to touch them! They are very hot!
Now you cut apples and celery in smaller pieces and combine with the chopped salad.
Then you top with the glazed walnuts and crumbled blue cheese.
Finally drizzle with olive oil and balsamico.
Serve with fresh baked bread.

- 1/2 Iceberg salad
- 2 Apples
- 3–4 sticks of celery
- 1 cup of Walnuts
- 3 tablespoon Sugar
- 1/3 cup of Blue Cheese
- Olive Oil
- Balsamico
Instructions
- Start by heating up a pan and add 3 spoonful water and 3 spoonful sugar and about 1 cup of walnuts.
