This one thing is quality. You want delicious tomatos (preferable locals), a great homemade pesto and a nice quality of olive oil.
With not neglecting the quality you will lift this salat to a super tasty, perfect lunch or a great side dish to accompany our favorite dinner.
We enjoy this dish year round, however the quality of fresh tomatoes varies a lot over the seasons of the year. Luckily I live in California where the sun helps us get fresh tomatoes more often than in Denmark. I so much appreciate that.
Sometimes I buy a mixture of different, tasty tomatoes in all kinds of different shapes, sizes and colors. That changes the look of this tomato salad, but definitely not the impressive taste.
You can of course use pesto from a glass, but it is really the most simple thing to make. Try my homemade pesto with basil instead. It’s easy done in less than 15 mins.!
You can cut your tomatoes like you are in the mood for. I mostly just slice them, but try cutting them in half if they’re small or else bite sized chunks works great.
You don’t need to drain the tomatoes or remove the seeds.
I often make tomato salad with fresh mozzarella. However if I make this dish the greek style way, I add feta and black olives in stead of mozzarella.
You can eat this salad alone with a good piece of fresh baked baguette or as a side dish to your fish, chicken, BBQ etc.

How to make tomato salad:
This dish takes no time to prepare, and you can easily make it ahead.
To begin with wash and cut the tomatoes in the shape you want. I sliced mine.
Now decorate them with chopped red or sweet onions and chunks of fresh mozzarella.
Then drizzle with some of your homemade pesto and olive oil – and the dish is ready to serve.
