Uhm, it’s time for a delicious salad with prosciutto, tomatoes and parmesan! An Italian-style salad combining the fresh flavors of ripe tomatoes, shaved parmesan, with the richness of prosciutto and the tangy flavor of balsamic vinegar.
Served with a piece og fresh baked bread and a chilled chardonnay, this is a salad you can eat all summer.
I absolutely love prosciutto, but I am not a fan of it raw on a piece of bread. Whenever you give the piece of bread a bite you end up with a small piece of bread and the whole slice of prosciutto in your mouth. Or am I the only one incapable of biting through this ham?
Roasted in the oven and it transforms into this nice and crunchy bacon, and that’s how I love it! Besides, I also love how it tastes together with Parmesan.
There is no need to prepare a dressing in a separate container, it’s all sprinkled and drizzled right on top of the salad.
A salad so simple, and you will feel like in heaven when you are enjoying it.

How to make the salad
To begin with you have to bake the prosciutto.
Place the prosciutto slices individually on a baking sheet with baking parchment on.
Then bake them in a preheated oven (400 degree Fahrenheit) for about 10-15 minutes until they are lovely crisp.
Now you cut the tomatoes into slices and mix them with the spinach.
Grate the parmesan over the salad and brake the prosciutto into smaller pieces and add to the salad.
Just before serving, drizzle with olive oil and balsamic vinegar.
Serve with fresh baked bread.
