These Raspberry Bites reminds me so much of my childhood!
The most fantastic thing was to walk down to the baker and push my nose flat against the window – and not being able to choose between all the delicious cakes..
– and then again, I almost always ended up whit this beauty! :o)
This cake is kind of crisp…
and fresh from the raspberries…
and sweet from the frosting…
and hypnotic to look at with all the colored sprinkle!
I simply just love it!!
The dough is easy to mix together and very easy to work with.
And basically you just divide the dough into two, roll them out into equal sizes, spred out some yummy raspberry jam, close the pieces and bingo!
Try yourself and be surprised!
Raspberry Bites
Ingredients: (about 12 pieces)
1,5 cup of Flour
1 stick of Butter (room temperature) (113 g)
1 teaspoon of Baking Powder
1/4 cup of vanilla sugar (or regular sugar)
4 spoonful of Water
Filling: Raspberry Jam
Glazing: 2 cups of Powdered Sugar mixed with 4-5 spoonful of boiling water + sprinkles for decoration.
Mix together Flour, Butter, Baking Powder, Sugar and Water until you have a nice easy-to-work-with dough.
Divide the dough into two.
Roll each lump out between two pieces of Baking Paper. (it doesn’t matter which form, they just have to match each other.)
Spread out a fine layer of Raspberry Jam.
Lift over the top by rolling it gently around your Rolling Pin. That makes it easy to lift it without “breaking” the dough.
Seal the endings by using a fork.
Bake for 18-20 minutes (until lightly golden) in a 400 degree Fahrenheit warm oven.
When the cake is cooled down a bit, spread out the glazing and sprinkle with the classic rainbow colored sprinkle.
Uhm.. Now I’m getting hungry for a piece myself :o)
