Have you tried my tapioca pudding with lemon and vanilla? My homemade lemon/lime salt, muffins with lemon and poppyseeds or french macarons with lemon? How about making your own homemade lemon oil for pasta, fish, meats or salads? Oh boy, and when its really hot outside I love the Frosted Lemonade. yumm! My love for lemons will continue for ever, but promise me you try and make your own lemon scrub for both hands and body, the classic danish cake called Lemon Moon or some of my sweet lemon cookies?!
I cannot get enough of things with lemon. Do you feel the same way too?
Back to the topic, this time I want to show you that dinner doesn’t have to be complicated to be amazing. This combination will surprise you – its easy, its rich in taste and its cheap.
– And what I really like about this dish is, that its only three ingredients: parmesan, thyme and lemon.
My kids loves pasta, but I am getting so bored with pasta with cheese or plain pasta with olive oil and chopped almonds.
So if you are looking for a new inspiration, here you go:
PASTA WITH LEMON AND THYME
To begin with you cook the spaghetti until al dente.
Next you mix the remaining ingredients in a large bowl.
However, if you have made your own lemon oil and like to emphasize the taste of lemon, I can recommend switching it out with the suggested plain olive oil. But that is up to you and your tastebuds.
Finally you add the cooked pasta to the mix of the remaining ingredients.
You do not have to heat it up, just mix it together.
Serve with a piece of freshly baked baguette, some extra parmesan and a glass of chilled Chardonnay.
Simple as simple can be.

- Juice from 2 Lemons
- Juice from 1 Lime
- Salt and pepper
