Here I go again with my never ending love for overnight oats, and this time overnight oats with espresso and chia seeds.
The best of the best; coffee and breakfast in one! What a lovely combination.
Can a breakfast, snack or lunch-combination be better and more healthy?
I think not!
I know… And you know, that you feel so much more healthy when you eat oats for your breakfast, am I right? – and by combining oats with the healthy chia seeds and the essential morning-coffee life is just complete.
I love the process of preparing my overnight oats. It like wrapping a little gift for myself. Every morning it’s like opening a special little gift, there has been waiting there in the fridge, just for me.
I simply get so excited when I take out the jar, open the lid, stir it around and top it with my homemade vanilla yogurt and chopped nuts – or add my fantastic homemade granola or fresh fruit.. or.. or.. or!
The sky has no limits. It is always a perfect beginning of a new day when you start your day with homemade overnight oats.
Try also to just bring it with you, as an easy snack when you get to your job. Theres no more excuses for not having time for a healthy breakfast on busy mornings.

Espresso Overnight Oats with Chia
To begin with, find a perfect Glass Jar (14-Ounce) with a matching lid is what I use.
Then just mix all the ingredients and stir.
Store in the refrigerator in the glass jar (or another airtight container) and let the oats soak for at least three hours, ideally overnight.
Then in the morning, you can add fresh fruit, granola, nuts, yogurt and/or other favorite toppings to your meal.

Ingredients
- 1/3 cup old fashioned rolled oats
- 1/3 cup unsweetened Vanilla Almond milk (or any milk or water)
- 1–2 shot espresso (about 1/4 cup)
- 2 teaspoon chia seeds
