Are you hungry for fun – try these no bake oat balls!!
This recipe is another easy and very classic danish kind cake that was one of my favorites when I was a kid.
I loved to make them and roll them in everything from sprinkles, coconut, oatmeal, pearl sugar, cocoa powder, etc.
In Denmark these oat rolls are called Havregrynskugler and that it literally straight translated from danish. They have a nice sweet smell from the almond extract and are served mostly during Christmas. However, its also a cake thats served all year round to a cup of tea or coffee.
When making these oat balls you only need 5 minutes to mix all the ingredients together. Since the oat balls require no baking it’s a true childproof recipe for them to master by themselves, and thats something they love!
This recipe calls for almond extract, which is my personal favorite, but you can easily replace that for rum extract or with espresso. That makes them a little bit more for adults.
The oat balls are best after they comes out, chilled from the refrigerator. And they can easily be kept in an air tight container in the fridge for a couple of weeks.
Can it be more fun and easy?

No bake Oat balls
I use a stand mixer to mix the dough together.
To begin with you cut the cold butter into small squares and add them in a bowl.
Then you add oats, cocoa, sugar and almond extract and mix it all toghether.
When the dough holds together, you form small round balls of the size with a large Olive. Then you roll this piece between your hands until its round.
Finally you decorate the balls by dipping/rolling them in sprinkles, sugar, coconut, oats,etc.
A good way to make the decoration of the balls easier, is by using a small jar with a lid. Place one oat ball in the jar, ad a spoonful of sprinkles and give it a good shake.
Now you just need to find an air tight container to store them in.
Keep them in the refrigerator in a container with an air tight lid.
Enjoy or Velbekomme as we say in Danish.

110 g cold butter (1 stick)
2½ cup oatmeal (preferably Quick 1-minute)
½ cup Hershey’s Cocoa
3 tablespoon almond extract
½ cup sugar
