
I have told you this so many times, but nothing beats homemade jam! Today I’ll show you how easy it is to make your own jam with strawberry and vanilla.
Whenever it is about fresh baked bread, pancakes, cakes etc. there’s simply not anything better than your own homemade jam.
It doesn’t matter if its summer or winter, if its for breakfast or afternoon tea – or if you add it on bread, in pancakes, in cakes etc. No matter in what combination and at what occasion, the sky has no limit and there is no doubt; homemade jam is homemade happiness!
It’s so easy to make and leave you with no excuse for not to make it.
Don’t worry about getting fresh fruit or berries – frozen ones are just as good!
Last time we spent a weekend by the fantastic Russian River, we were so lucky that we passed by some bushes with blackberries. Just one handful of freshly picked berries got turned into the most fantastic jam later that night. There was even enough for both danish pancakes in the evening and our freshly baked bread for breakfast. That is a memory our kids love from that weekend!
There is just one mainrule to follow:
For every pound of fruit use half of the weight in sugar.
Family favorite strawberry and vanilla jam:
JAM – STRAWBERRY & VANILLA
Cook the berries so they become soft (10 min.) together with the vanilla seeds and pod.
Add sugar and cook to dissolved.
Remove the vanilla but dont throw away.
Blend with a hand blender and pour into scalded Jars.
Add the vanilla pods to the jars.
Easy peasy as promised!

Ingredients
- 1/2 lb frozen berries
- 1/4 lb sugar
- 1/3 cup water
- 1 whole bourbon vanilla pod (split and scrape)
Instructions
- Cook the berries so they become soft (10 min.) together with the vanilla seeds and pod.
- Add sugar and cook to dissolved.
- Remove the vanilla but dont throw away.
- Blend with a hand blender and pour into scalded jars.
- Add the vanilla pods to the jars before you close the lids.
Easy peasy as promised!
