I love home cooked jam. Especially this jam with blackberries and anise.
It is simply just so super easy to make and the taste is so much better than the store-bought ones!
Jam can be used in so many ways – I like to add it to cake when I bake.
We eat it a lot of jam in this house. Especially together with cheese. With or without bread.
But speaking about bread. There’s nothing better then getting up in the morning, before anyone else and knowing that 30 mins later you’ll have fresh baked bread ready for breakfast.
Twice a week I prepare the dough for an overnight bread (no knead!) before I go to bed. The next morning I simply just divide the dough with two spoons (no greasy hands!) and bake the breads while taking a shower.
Those mornings where the house smells of fresh baked bread, the kids are always waking up happy.
And getting a warm piece of bread for breakfast, with melted butter and jam just always brings a big smile.
My kids also love to bring a piece of the fresh baked breads with them for school as a sandwich with ham, cheese and pesto.
But… this post was about jam not bread, haha.. and this time the jam is made with two of my favorites; Blackberries and Star Anise.
You will never regret making your own fruit jams.
Mainrule: For every pound of fruit use half of the weight in sugar.
Jam – with Blackberries and Anise
To make this fantastic jam you just need to start by adding the berries to a medium sized pot.
The berries can both be frozen or fresh.
Now you cook the berries with the little amount of water and the Star Anise for about 20 minutes.
Stir so it doesn’t get burnt.
Next step is to add the sugar, and you now cook until the sugar is dissolved.
Remove the Star Anise – but don’t throw away!
Now you blend the mix with a hand blender in the pot and pour into scalded jars.
On top of each jar of homemade happiness you add one of the previous cooked Star Anise.
Close tightly with the lid.
Keep them in the refrigerator where you can store them for a few month. (IF they last that long, haha!!)
