When we have an urge to crave something delicious savory the easiest thing to make is a hummus with pinto beans.
I don’t really need much more than hummus, crackers and some veggie sticks to be happy. Ok, maybe a glass of chilled white wine in our atrium would be nice too. Yeah, that life!
You have probably also tried to come home after a busy day and then the neighbors pops by and you have nothing to serve?
Don’t worry.
This dip is made in minutes and makes it perfect for unexpected guests, in front of a good movie, for picnics, potlucks etc.
Hummus can be made in a tons of different ways, but this way with white pinto beans has become one of out favorites. However we very often use chickpeas, the classic way, too.
Super easy and super yummy!
You can of course make it the-super-mom-way, by soaking dried beans in water overnight, and boil them for 1½ hour.
But if you are a human like me or sometimes don’t have the time (or forgot to soak the beans?! oh no!!) you can easily just grab one of those canned pinto beans and use them instead.
The result is just as good!
We dip everything from carrots, celery or cucumbers, crispy thin slices of toasted rye bread or Stone Age bread, grissini or cripsbread in it.
Yummy, I could eat this every day!
Hummus with pinto beans
To begin with rinse the beans in a strainer under running water.
Hereafter you add them to a pot with water and boil them for about 20 minutes.
Next you blend the beans together with the remaining ingredients.
If you want a more light version, you can use a little bit of the cooking water instead of olive oil.
When the hummus cools down it thickens up a bit.
That was easy peasy, right!
Enjoy!
