Grissini are a classic italian bread. The breads are crunchy and pencil-sized with a rustic, uneven appearance coming from the hand-stretched process.
They often served to antipasti or as a snack to nibble on while you enjoy your wine.
Although I prefer them plain, these breadsticks are easy to flavor. Add chopped fresh herbs, parmesan cheese, seeds or spices to the dough. You can also sprinkle them with sea salt, sesame seeds, cumin seeds just before you bake them.
You can shape them in any way you prefer, straight or twisted, thin or thick. The length of the breadsticks will be determined by how large your oven is. If you have a wide oven you can make very long sticks.
This recipe makes about 40 bread sticks, but do not hesitate to make a larger portion – you can easily freeze them.
Grissini breadsticks
When you make the grissini breadsticks you need to start by activating the the dry yeast. You do this by mixing the dry yeast with luke warm water added honey or sugar.
Now you let this mix stand for a few minutes until it begins to bubble a bit. When it you see bubbles, the yeast is activated and ready to use.
In a bowl you combine all the remaining ingredients and knead it thoroughly – preferably 10-15 minutes!
Then you have to let the dough rise for about 1 or 1 ½ hour until it is twice its size.
Then you sprinkle a little Semolina flour or regular flour on the table and roll the dough thin.
Now you cut the dough into long strings (pencil thickness) and stretch them into desired size.
Then place them on a baking sheet with parchment paper and let them rise for ½ hour.
Now you bake the grissini breadsticks about 12 minutes at 400 degrees Fahrenheit.
The breadsticks have to be baked completely so they are nice and crisp.
Let them cool down and enjoy your homemade happiness.
Then can store the breads in an airtight container up to a few weeks or you can freeze them.
