This Focaccia a la Marinara is pretty much like an easy version of a cheese pizza. Just easier to make and freeze for picnics or lunch bags.

The dough raises in the fridge overnight at requires no knead at all! In fact you don’t have to touch it with your hands.


  • Dough from my Italian Overnight Breads
  • Pizza Sauce from my Authentic Italian Pizza sauce
  • Olive Oil
  • Fresh Mozzarella
  • Dried Basil/Oregano for sprinkle.


Use the dough from my Italian Overnight Breads .

To make the small focaccia you use two spoons to handle the dough.

Place a few spoonfuls of the very sticky dough in small dots on a tray with parchment paper, as you would have done to make the regular breads.

Then you take a clean spoon and dip it in Olive Oil.

With this spoon you flatten out the breads.

Don’t be scared to use a spoonful of oil on each focaccia – it will just make them more crisp ;o)

Now you add a spoonful of my Authentic Italian Pizza Sauceon each focaccia and spread it out a bit.

Top with a few chunks of fresh Mozzarella and finally prinkle with dried Basil and/or Oregano.

Bake the focaccia’s in a pre-heated oven  (225 degree Fahrenheit) for about 15 minutes and they will look just right.


Excellent for the freezer.
