These Crispy Oatmeal Cookies are one of my childhood favorite cookies!!
It is a very classic cookie from Denmark and we eat them with or without filling. We call them Havregrynskager and they are known for being a very thin and crispy cookie.
I love these crispy cookies for their light innocent look and the way they brake when you take a bite. However I love them even more, when they are dipped in chocolate and paired up as a sandwich!!
Another thing that I love about this crispy cookie recipe is that I almost always have all the ingredients at home, and don’t have to plan too much ahead.
That is especially nice if we suddenly decide that we “need” to bake – like now!
Theres only one problem. They disappear too fast, so I always regret I didn’t make a double portion.
The dough for these crispy oatmeal cookies is super easy to make and to work with, which makes it an excellent cookie for kids to bake by themself.
Just remember to teach THEM to make a double portion, please!! 😋 haha..
Crispy Oatmeal Cookies
To begin with you start by melting the butter.
Then you add the oats and let it stay and soak for about 15 minutes.
While they soak you can mix the egg, sugar and vanilla until it turns white, light and fluffy.
Now add flour and Baking Powder.
On a baking sheet with baking parchment you place a teaspoonful! of the dough with plenty of space in-between the cookies.
Maximum 8-9 cookies per sheet!
I doesn’t look like much, but just wait and see!!
Now, bake the cookies for 8-10 minutes at 400 degrees Fahrenheit.
Finally you let them cool down completely and them store in an airtight container.
You can also choose to dip them in melted chocolate or pair them as a sandwich if you like that.
Store the chrispy oatmeal cookies in an airtight container.
Enjoy..

I made these, but I tweaked the recipe to make them vegan and gluten-free. They came out like crispy vanilla-oat lace. Very delicate and very delicious! Thank you! 🙂
