When it is summer and hot outside, it is time for a bowl of cold buttermilk soup or koldskål with Nilla Wafers (or kammerjunkere as we call them in Denmark).
In my family we (mostly) have this as a dessert, but since it’s the kids and my summer favorite, we can easily eat it just as is like an easy kind of dinner instead 😜
I know that there’s a lot of traditions linked to this classic danish dish, but for generations my family has made it this way.
Not with lemon, not with egg white foam, not with whipped cream etc.
And I’ll give you the recipe here:
COLD BUTTERMILK SOUP OR KOLDSKÅL
Ingredients: (serves 4)
2/3 cup of pasteurized real egg
1/2 cup of sugar (or use homemade vanilla sugar!)
1 liter of buttermilk
beans from 1/2 vanilla pod (if you don’t use vanilla sugar)
Simply just start by mixing sugar, vanilla beans and the pasteurized real eggs until it turns white and fluffy.
When white and fluffy you add the buttermilk and mix it in.
Finally serve with Nilla Wafers or Cornflakes.
Enjoy immediately – and enjoy the summer.
Try also to top this cold buttermilk soup with fresh strawberries or add some homemade double chocolate granola instead of the Nilla Waffers. You can also drink it like a smoothie – and the benefit of this dish is that it is rich in proteins.
So don’t feel so guilty after all.
