A Classic Pound Cake – with vanilla, this time – is often associated with something (dry and boring?) you got at your grandparents as a child.
But the fact is, that a Classic Pound Cake IS a Classic!
It doesn’t require a lot of fancy stuff to make it, it’s easy to mix together, it’s eaten plain (and yummy) as it is and if you store it in the fridge it will keep moist and delicious for days!
A pound cake is a “base” and you can vary the batter with any kind of flavor such as adding chocolate (powder or chips), lemon, orange, poppy seeds, nuts, coffee, pumpkin, coconut, fruit or try adding different spices such as cardamom, cinnamon or as I did; Vanilla.
I’m sure you will start loving the classic pound cake again!
Classic Pound Cake with Vanilla
Ingredients: (1 loaf)
4 eggs
1 cup Sugar (200 g)
2 sticks Butter (200 g)
1,5 cup Flour (200 g)
1 teaspoon of Vanilla Bean Paste
1 teaspoon Baking Powder
a pinch of salt
Preheat oven to 325 degrees Fahrenheit.
Mix the eggs and sugar until it’s white and fluffy.
Gradually add Butter (room temperature), Flour, Baking Powder, Vanilla Bean Paste and Salt – mix, but not too much, it will make the cake tough.
Grease a Standard 9×5″ Loaf Pan pan with crisco or softened butter and pour in batter.
Bake for 55 minutes and test if done by sticking in a meat needle or a wooden toothpick to se if any batter sticks to it. If yes – continue baking 5 minutes and check again – if not – its done.
Cool down on a rack for 5 minutes before removing from pan.
