Welcome to the taste of summer – welcome to this Classic Cold Potato Salad!
There is simply nothing better, that getting your fingers into the first earlies potatoes – a taste I miss so much!!
In Denmark the taste of summer IS the taste of the new potatoes!! (they also costs a fortune – and is treated like they were made out of pure gold!)
But in the short time you actually can get them, they are the main course of every dinner!
I love easy dinners – especially during summer where we BBQ most of the evenings. I love to BBQ and IF you are lucky to get your hands into the first earlier potatoes (or just some other firm potatoes that don’t turn into mashed potatoes when you boil them) then try to make this Classic Cold Potato Salad!!
Classic Cold Potato Salad
Ingredients: (4-6 persons)
1 lb new potatoes
1 cup radishes
3 spring onions
1 clove garlic
1 bundle of chives
2 tablespoon homemade aioli OR regular mayonnaise
4 tablespoon sour cream
2 tablespoon vinegar
1 tablespoon sugar
salt/pepper
Cut the radishes into thin slices and place them in ice-cold water.
Chop the spring onions, garlic and chives
Scrub the potatoes and put them in lightly salted water
Bring the potatoes to a boil, turn down until the potatoes boils easily and let them cook for about 10 minutes or until tender.
Drain the potatoes, but them in not too small pieces and place in the freezer or refrigerator while you prepare the dressing.
Dressing:
Mix mayo, sour cream and vinegar and season with sugar, salt and pepper – the dressing should aim to be sour/sweet/salty.
Gently turn the potatoes, radishes, spring onions, garlic and chives in the dressing.
Serve the Potato Salad not too cold and not too warm, but it’s probably a matter of taste.
You can also tune the above with various commodities – here are some of my favorite extras: capers, gherkins, raw green asparagus, sun-dried tomatoes, cucumber, dill….
Serve the potato salad to a nice grilled sausage or a juicy pork chop.
