Bruschetta with Tomato and Basil

This kind of bruschetta with Tomato and Basil takes me straight to Italy and all our wonderful memories from our many vacations spend there.

The crisp, grilled bread is incomparable and the tomato/basil combination together with the smooth fresh mozzarella gives me wings!



  • 4 slices of a nice, sourdough bread
  • 23 tomatoes
  • 1 clove garlic
  • 2 oz fresh mozzarella
  • 1 handful of fresh basil
  • olive oil for a drizzle


  1. To make these easy bruschetta you’ll need a version of Italian bread. It does not matter what shape, but sourdough is preferable.
  2. First you will have to make a mix of the topping.
  3. This topping you can keep in the refrigerator a few hours to marinade a bit. However you do not have to do that, if you are in a hurry.
  4. I prefer to prepare the mix in the morning and when I need it, I don’t have to mess around in the kitchen. That leaves me with more time to socialize with my family or if we have friends over.
  5. When you prepare the mix you will have to cut the tomatoes and mozzarella in small pieces.
  6. I prefer to remove the seeds thats inside the tomatoes so the mixture doesn’t get too wet when its marinating.
  7. Next you cut the basil and garlic very finely and add to the tomatoes and mozzarellas.
  8. Then you slice the bread and drizzle the pieces gently with olive oil on both sides. I use a little brush for this.
  9. Place the breads on the grill for about 2 minutes (don’t move them around) until they get a nice color.
  10. Flip the breads over and add the tomato/mozzarella/basil-mix.
  11. Grill the breads for 3-4 minutes until the mozzarella starts melting.

Serve the warm bruschetta straight from the grill with a nice glass of Chardonnay!



The topping can be prepared ahead and stored in the fridge.
