Almonds with Rosemary… my absolute favorite in this writing moment!
Not only are they fast to make, they are also a nice, healthy snack – as we all need in this joyful wintertime with Thanksgiving and Christmas around the corner!
Did you know that almonds has extremely high health benefits?
Almonds are a great source of vitamin E, copper, magnesium and protein. Just one handful (one ounce) contains one-eighth of our necessary daily need of protein!! They are loaded with antioxidants, assists with blood sugar control, can help you lower your blood pressure- and cholesterol and reduces hunger – witch is good for weigh loos too!
So feel good about this snack – and enjoy the combination of rosemary with a salty touch.
Almonds with Rosemary
Ingredients:
1 cup of almonds (preferred Blanched Marcona Almonds)
2 teaspoon dried rosemary
1 teaspoon olive oil
a pinch of salt
First you dry roast the almonds on a frying pan for a few minutes.
If you cannot find Blanched Marcona Almonds, you can skin* your regular almonds.
Mix with rosemary, oil and salt.
Enjoy!
How to skin your own almonds:
Place your raw almonds into the boiling water.
Let them boil for exactly one minute. Don’t boil for any longer than 60 seconds, or your almonds will start to soften.
Drain the almonds immediately in a colander or strainer and rinse them with cold water to cool them.
Use your fingers to gently squeeze the almonds and loosen the skin from them.
Once you remove the skins, let the almonds dry off completely.
Discard the skins.
