Pesto is absolutely fantastic!!
Almost everyone likes it, and in this house, we use it for everything! (almost)
We mix it in our pasta, in salads, in our meat sauce, our lasagne, marinate chicken in it, top our fish dishes with it – and we use it as a dip when we snack.
It is incredibly easy to make and can be varied in so many ways!
You don’t have to use pine nuts, but you can easily use eg almonds, pistachio, sunflower seeds or what about trying cashew nuts?! – And you do not have to use fresh basil as in this, but feel free to use your favorite herb such as parsley, mint, rucula or mix them!
The pesto can easily be keept it in the fridge, so do not worry about eating it all at once.
Pesto
Ingredients:
2 cloves of garlic
2 oz fresh basil
2 oz parmesan
2 oz pine nuts
½ cup olive oil
salt and pepper
Toast the pine nuts lightly in a pan.
Mix all ingredients together and blend them with a hand blender or food processor. Should it be truly authentic, use a mortar.
It may be necessary to adjust the olive oil.
