Here I go again – with my never ending love to overnight oats – and coffee. (heehee…)
– Can a breakfast, snack or lunch-combination be better and more healthy?
I think not! ;o)
I know that you feel so much more healthy when you eat oats for your breakfast – am I right?
-and combining it with the essential morning-coffee, just makes it complete.
And I simply just love the fact that it is so easy to make.
Every morning is like opening a special little gift, there has been waiting – just for me. And I get so excited when I top it with my homemade vanilla yogurt and chopped nuts or granola. What a perfect beginning of a new day.

Espresso Overnight Oats with Chia
1/3 cup old fashioned oats
1/3 cup unsweetened Vanilla Almond milk (any milk or water(
1-2 shot espresso (about 1/4 cup)
2 teaspoon chia seeds
Mix all the ingredients in a Glass Jar (14-Ounce) with a lid.
Store in a glass jar or another airtight container and let the oats soak for at least three hours, ideally overnight.
In the morning, you can add fresh fruit, nuts, yogurt and other favorite toppings to your oatmeal.
