This kind of bruschetta with Tomato, Mozzarella and Basil takes me straight to Italy and all our wonderful memories from our many vacations spend there.
The crisp, grilled bread is incomparable and the tomato/basil combination together with the smooth fresh mozzarella gives me wings!
I simply don’t need anything else!
We often eat this combination as an easy lunch or a light dinner OR as an easy starter when we have guests over.
The topping can be prepared ahead and stored in the fridge, so this literally takes no time to make, since you prepare the bruschetta straight on the grill!
Bruschetta with Tomato, Mozzarella and Basil
Ingredients: (serves 2)
4 slices of a nice, sourdough bread
1 clove garlic
2 oz fresh mozarella
1 handful of fresh basil
Cut the tomatoes and mozzarella i small pieces.
Cut the basil and garlic finely.
Slice the bread and drizzle gently with olive oil on both sides.
Place the bread on the grill for about 2 minutes (don’t move it around) until it gets a nice color.
Turn the bread and add the tomato/mozarella/basil-mix.
Grill the breads for 3-4 minutes until the mozzarella starts melting.
Serve the bruschetta straight from the grill with a nice glass of Chardonnay!
