Do you sometimes want dinner (or dessert) to be easy, child friendly – and cheap too!? I can recommend rice porridge. In Denmark rice porridge is normally served in December leading up to Christmas (we call it Santa’s favorite food!) – but we’re enjoying it all year round – and sometimes once a week!
When it is summer, it is time for koldskål or a bowl of sweet buttermilk with Nilla Wafers. In my family we (mostly) had this as a dessert, but since it’s the kids and my summer favorite, we can easily eat it as an easy kind of dinner instead 😜 I know there’s a lot of…
I love making my own caramels, especially caramels with licorice and coated with dark chocolate! 😋 In this version I added Licorice Powder and super finely chopped almonds – just to give them some texture – but if you don’t have (or like?!) licorice, this recipe works equally fine without it – so no worries…..
This salad with prosciutto, mango and pecans taste of warm, long summer nights! :o) The crispy caramelized pecans, the salty prosciutto and the sweet mangoes makes this salad an evergreen, and suitable for almost everything!
This is Italy when it’s best! Enjoy these Italian Biscotti with a good cup of espresso – or just your favorite one ;o) – and you’ll see what I mean. Biscotti can be made in thousand of ways – but they are always twice-baked, dry and crunchy!
I love home cooked jam. It’s something so easy to make and the taste is so much better! This time I experimented with two of my favorites; Blackberries and Star Anise.
Uhm, it’s time for yet another delicious salad! This one is so simple – and you will feel like in heaven when trying this combination of sweet tomatoes with the crispy prosciutto, the salty parmesan and the sweet and sour balsamico! Try bringing this one for your next potluck – and amaze your friends!
There is something about the sweet walnuts combined with the fresh taste from the celery and apples that just goes perfect with the crumbled blue cheese. This salad is actually inspired from our favorite at California Pizza Kitchen ;o) Try it!! I just say: Yum, yum, yum!!!
Although it is a bit outside the pumpkin season, I still like a good, creamy pumpkin soup! And soup is perfect! Especially on the days where we have a lot of after school activities and dinner needs to be quick and easy ; o)
